Chicken Fajitas - High protein meal for weight loss!

Do you want an amazing, quick, and protein packed meal? Well, today we’re going to talk about a tasty Chicken Fajita recipe!

Ingredients

  • 2 lbs. boneless skinless chicken breast

  • 2 packets mccormick fajita seasoning

  • 0.5 yellow onion

  • 1 red bell pepper

  • 1 orange bell pepper

  • 1 yellow bell pepper

Directions:

  • Cut or slice chicken into 2-inch strips and put into a bowl.

  • Sprinkle one of the fajita seasoning packets onto the chicken. Mix around.

  • Rinse your peppers and chop or slice. I sliced mine into thin strips.

  • Put in a separate bowl.

  • Remove outer skin of onion, then chop or slice. Put into the bowl with the peppers.

  • Sprinkle the other fajita seasoning packet onto the peppers and onion.

  • Mix around.

  • Turn stove eye to medium-high heat and spray a large skillet with cooking spray.

  • Toss in your onion and peppers, stirring every minute or so, until the onions become translucent.

  • Remove from skillet. (I put mine back in the bowl they were in before)

  • Toss in your chicken. Mix around every 2-3 minutes to make sure it cooks evenly.

  • Once chicken is almost finished, put onion and peppers into the skillet with the chicken and mix together.

  • Cook for an additional 5 minutes or until chicken is completely cooked through and peppers are tender.

  • Let mixture sit off the heat for a few minutes before serving.

Additional Notes

I know a lot of other recipes say to put 1-2 tablespoons of oil in the pan before cooking your veggies, but please don’t waste your Calories by doing that. Using a quick spray of cooking spray will do the job just as well without the added fat. Some liquid will form in the pan anyway from the chicken and the veggies. You don’t want to end up with watery, bland fajitas!

We like to use Mission’s Carb Balance tortillas with this recipe. They’re the best high fiber tortillas in my opinion. Throw in some shredded lettuce, salsa, and maybe some sour cream and you’ll be filled up in no time! These fajitas also store well in the fridge so prep some meals for the week! You won’t be sorry!
